For my mortgage loan, payments show up as spending from my bank account and do not show up as income when in my mortgage account (correct). however when they make payments out of my escrow, those payments do show up on the overview page trends section. If I specifically hide these transactions, they are no longer accounted for.

What are you referring to when you say "overview page trends"? I'm not entirely clear what section you are referring to.
I can say that we only give users an option to hide a transactions from Budgets & Trends, but not all of Mint, but understanding specifically what you are referring to would be helpful.
It likely has to do with the way payments are being made. I'm not familiar with how "making a payment from escrow" works, but it sounds like a one time (or infrequent) occurrence since it likely only happens when you are purchasing a new home (I'm guessing). I'm not sure how to advise you to address this as there may not be a workaround.
What online bank account is associated with the escrow account? If none, that may be the issue.
It also is an issue with my store credit card. If I change that card to "Hide account from budget and trends" It is correctly hidden everywhere except for the overview page. Like mentioned before, hiding individual transactions does function properly.
for this account I dont count the purchase because I only use this when there is 0% for 6 months. I think of it as a loan and only count the payments.
